Ben Batterbury, True South Dining Room
Our award-winning Executive Chef Ben Batterbury is a cuisine expert with a polished repertoire that includes French and English fusion mingled with the flavors of Madeira on the Portuguese archipelago. Ben’s signature is using quality, seasonal ingredients that he personally sources in Central Otago before intimately crafting them in his kitchen to ensure culinary perfection.

Ben has attracted the attention and praise of media such as Good Morning, MiNDFOOD and Cuisine magazine. Formerly the New Zealand Beef and Lamb Ambassador for 2012, his favourite eateries were recently included in ‘Where Chefs Eat’, a prestigious restaurant guide published by Phaidon Press.

The Left Bank of the Gironde river includes the Médoc and Graves within it’s region. Bordered by a large forest, this reduces the effects of the harsh maritime climate on the vineyards.
